piehaus, Dubai’s third-culture specialty phyllo bakery, recently awarded Best Bakery at the Time Out Dubai Restaurant Awards 2026, is  launching Counter Culture Series, a new ongoing collaboration series bringing together standout chefs, creatives, and homegrown brands across the UAE through limited-edition pies released throughout the year.

Through its Counter Culture Series, piehaus expands this ethos into collaborative storytelling, inviting leading culinary personalities and creatives to reinterpret flavours, memories and cultural influences through the brand’s signature pies. The limited-edition Eid Al Adha pie brings together piehaus’ handcrafted approach with Sahar’s contemporary interpretation of Emirati flavours, celebrating heritage through a fresh and modern lens.

“Counter Culture Series is about bringing people into the heart of piehaus, working with chefs and creatives we admire to turn personal stories, heritage, and flavour into something shared. Each pie is a collaboration, but also a reflection of the city we’re building this in,” said Stasha Toncev, the founder and creative force behind piehaus.

The first edition, launching on 26 May to celebrate Eid Al Adha, sees piehaus collaborate with acclaimed Emirati pastry chef Sahar Al Awadhi, recognised as the UAE’s first Emirati pastry chef and regarded as one of the region’s leading pastry talents, on a special Emirati-inspired pie created exclusively for Eid Al Adha: Chebab Pie

Chebab Pie reimagines traditional Emirati chebab through piehaus’ bold and flavour-forward fillings: the dough is infused in saffron & fresh ground cardamom, and the filling combines cream cheese and date syrup. It sits somewhere between memory and modernity: familiar in spirit, but reimagined in texture, flavour and form - perfect to enjoy with hot or iced karak tea. 

Chef Sahar is known for championing local ingredients and modern Emirati culinary expression, while Chef Milan Jurkovic, the culinary talent behind piehaus, and Stasha Toncev bring a bold, flavour-forward and generous approach to everything they create. Together, they’ve created the Chebab Pie - a nostalgic nod to the traditional chebab, the golden pancake of the United Arab Emirates symbolising the warmth of Emirati hospitality, carrying the rich flavors of saffron, cardamom and tradition through every generation.

In less than a year, piehaus has become a favourite with Dubai diners for its hearty dishes, with pies at the centre of it. The phyllo is stretched by hand until it’s almost paper-thin, then wrapped around rich, generous  fillings that feel rooted in tradition but still fresh and modern.

She took power over the weekend following the death of 78-year-old President Bingu wa Mutharika, who died in office after heading up the southern Africa country since 2004.
Mr Mutharika's decision to appoint her as his running mate for the 2009 elections surprised many in Malawi's mainly conservative, male-dominated society - which had never before had a female vice-president.

Equally surprising was her decision to publicly stand up to her boss - by refusing to endorse his plans for his brother, Foreign Affairs Minister Peter Mutharika, to succeed him as president in 2014 when he was due to retire.
She was promptly thrown out of the ruling Democratic Progressive Party - and subjected to daily doses of derision at public rallies and on Malawi's state airwaves.

A senior ruling party official openly said Malawi was "not ready for a female president", while First Lady Callista Mutharika said Mrs Banda was fooling herself that she was a serious politician - saying she was a mere market woman selling fritters.
"She will never be president, how can a mandasi [fritter] seller be president?" Mrs Mutharika said.

Mrs Banda took all this in her stride, saying she was glad to be identified with market women since more than 80% of Malawian women belong to that category: "Yes, she's right, I'm indeed a mandasi seller and I'm proud of it because the majority of women in Malawi are like us, mandasi sellers."
She also resisted calls for her to resign as the country's vice-president - she was elected not appointed so she could not be fired by Mr Mutharika - and instead set up her own People's Party.

Born in 1950 in the village of Malemia near the southern town of Zomba, Joyce Hilda Ntila was the eldest in a family of five children.
Her father was the leader of Malawi's police brass band and her youngest sister, Anjimile, ran pop star Madonna's charity Raising Malawi until it closed in December.

She left her first husband in 1981, taking her three children with her, because he was abusive.
"Most African women are taught to endure abusive marriages. They say endurance means a good wife but most women endure abusive relationship because they are not empowered economically, they depend on their husbands," she told the BBC about her decision.
Eight years later, Mrs Banda founded the National Association of Business Women, a group that lends start-up cash to small-scale traders - making her popular among Malawi's many rural poor.

That work also earned her international recognition - in 1997, she was awarded, along with former Mozambican President Joachim Chissano, the US-based Hunger Project's Africa Prize for Leadership for the Sustainable End of Hunger.
She also set up the Joyce Banda Foundation, a charity that assists Malawian children and orphans through education - she has a degree in early childhood education.


Joyce Banda cut her teeth in politics in 1999 when she won a parliamentary seat on the ticket of the former ruling United Democratic Front.
She held a number of cabinet positions under former President Bakili Muluzi and Mr Mutharika during his first term.

She puts her achievements down to her happy marriage to retired Chief Justice Richard Banda with whom she has two children.
"My dear husband, Richard, has been the driving force behind my success and rise to whatever level I am now. My story and legacy is incomplete without his mention," she said.

Mrs Banda's presidential challenges are huge: Aside from handling political divisions and possible opposition from Mr Mutharika's allies, she has to address Malawi's serious economic difficulties.

It is one of the poorest countries in the world, with an estimated 75% of the population living on less than $1 (60p) a day.
And former President Mutharika fell out with most of Western donors - on which the country depends for financial support.
The cutting off of direct aid resulted in the country's worst shortages of foreign currency, fuel and essential drugs.
But she has immediately made her mark - sacking Malawi's police chief Peter Mukhito, accused of mishandling anti-government riots last year in which at least 19 people were shot dead, and Patricia Kaliati as information minister.
In the wake of Mr Mutharika's death, Ms Kaliati had held a press conference saying Mrs Banda had no right to take over as president - despite what the constitution said.

The head of Malawi's state broadcaster has also been replaced.

I’ve been evaluating both of these shopping cart systems for a project I’m working on. Here are my opinions after a few hours testing…

OpenCart (v0.7.7 tested)

OpenCart looks great and is simple to setup and use. It’s probably aimed at smaller online shops, but is stable, fast, and caches pages. It’s new, so there aren’t many mods or themes just yet. Custom templates look straight-forward though.
My main concerns:

  1. It uses MySQL MyISAM tables (fast with full-text indexing, but no foreign keys or transactions). I’d really expect InnoDB to be used for a shop.
  2. URL aliases/mod-rewrites don’t work and there are few SEO considerations – descriptions and keywords can’t be entered. This should be fixed in the next version, but mod-rewrites need easier implementation (there’s currently a lookup table that must be manually populated with the real and aliased URL for every page).
  3. Template values are inserted using global variables. It feels dirty, and problems could occur with that approach. The current templates use transitional HTML, but I think standards-based versions should be possible.


It’s worth keeping an eye on the project and it’s definitely one I’d consider as it matures.

A serious amount of effort has gone into Magento. It’s huge, can run multiple shops, and has an Amazon-like plethora of features. The interface is nice, support is excellent, and there’s lots of help including video tutorials. InnoDB tables are used, mod-rewrites work, and SEO is well implemented.
My main concerns:
  1. It has high system requirements and could get slow with lots of users. The system could benefit from page caching.
  2. It’s a seriously complex piece of software and has a steep learning curve. It’s one for large companies rather than one-man stores (I couldn’t get a product to appear on the home page!)
  3. Templating is very flexible and uses XML to define multiple HTML page layouts and sections. But, it’s complicated: there are dozens of files in multiple locations, and the documentation appears to be wrong or out of date. It also seems to embed page-specific JS form validation code in the page head – not great.
Only a few people appear to be using it so far … that’s a little worrying given the positive press it’s had. Magento is very promising, but I would suggest waiting until it’s out of beta before using it.
